Labor cost percentage is the share of revenue you spend on labor. The formula is simple: total labor costs (wages + overtime + payroll taxes + benefits) divided by total revenue, multiplied by 100. It's the single most-used ratio for benchmarking a restaurant, retail, or service business against operators just like you.

Sum every dollar you spend on people in a given period — hourly wages, salaried pay, overtime premiums, payroll taxes, benefits, tips paid out via payroll, and any contract labor. It depends on the format, and these are total labor cost (wages plus benefits and payroll taxes). Quick service restaurants typically run 25–31%. Full service sits around 34–38%.
